Kale can be used in lots of ways! I had never tried it until it first showed up in my CSA about two years ago, and now I love it. Super versatile, and super good for you.
One of my favorite ways to eat kale is in soup, but it's gotten so hot here lately that soup is unappealing. Kale benefits from being paired with something salty, so if I'm sauteing it as a side dish, I will often add a little bit of bacon or anchovy. Garlic too. It also works well with starches like potatoes or pasta. I also like to blanch kale and put it in between the layers in a white lasagna. So many different options!
